Hi Mark,
I played two courses when I was out there a couple of years ago; Orange County National and Disney's Magnolia.
Disney's Magnolia is where they play the Funai Classic - I wanted to play a course Tiger had played! It's in the heart of the parks and well sign posted. The normal green fees are around $140, but if you play after a certain time (it was 3:00pm when I was there in June) they drop to $45 and you still have plenty of daylight to get round. Price includes a buggy. A good course and exceptionally well kept, as you would expect. Loads of wildlife wandering around - racoons, deer, armadilloes, turkeys - picturesque and some of the sneakiest greens I've ever played on!
Orange County National is about 40 minutes drive from the parks but well worth it. They have two courses, crooked cat and panther lake. The course was rated in the top 10 public courses in America by almost every publication last year; I played panther lake and have to say it's still probably the best course I have ever played (and I've played a few!). The missus wants to go back to Florida in a couple of years and I will make a point of going back there again. I booked through our accomodation and got 18 holes, buggy, range balls, baseball cap and glove for $55 (normal green fee is around $75). The course is part of the USPGA Qualifying Tour. Don't get too close to the lake behind the 14th green as it has an indiginous alligator population! here's a link, the green fees for the dates you are out there are under Golf Courses, Rates -> http://www.ocngolf.com/ . I highly recommend this course.
Wherever you play, check with reception at your accomdation first as they often have deals with some of the courses. Most green fees drop in the mid-afternoon as Americans seem to want to play early in the day; this also means the courses are a little quieter. Play in the midweek if you can.
Hope that helps.

The economy is bad out there at the moment. Wife and daughter just got back. They are now asking for up to 30% TIPS.
Head for the first McDonald's and pick up a book of "Central Florida Vacation Coupons", they have $3600 worth in them.
The Golf ones are:-
$10 off Shingle Creek but not twilight
$10 off Remington ALL YOU CAN. Thats Practice, Play & Eat.
$10 off Kissimmee Bay Country Club
Flat $42 pp at Kissimee Golf Club + FREE SLEEVE OF BALLS + On-line Tee Times
Plus there are many more to be had too.
