Stableford ?

Hello All

Excuse my ignorance but what is the general rule of thumb for scoring stableford .

Do you use your full handicap , 3/4 handicap or 7/8 handicap. Got a golf day sorted for the 14th and want to make sure it goes ok.

Also how excatly do we score, do we just work out our points for each hole as we play or do we write down our actual score for each hole then work out points back at the club house.
